There is always one Camera in the project that is the “Default Camera”. This Camera is the one that is assigned to all newly imported Photographs (unless Camera Matching has taken place). This camera has the “[Default]” text after its name in the list. To change which is the default Project Camera, select the Camera in the list and press the “Set as Default” button.
